Abstract:
General files of the Nutrition Division and its consultants, primarily Lucille K. Billington and Martha Kjentavet. Included are correspondence, memoranda, minutes, writings, and statistical and narrative reports documenting various aspects of the nutrition program. Also included are subject files on legislation on the enrichment of food; workshops and nutrition education and training provided to nursing homes, hospitals and hospital employees, teachers, and employees of school lunch programs; field studies of the division's program by graduate interns; special projects such as the Western Wisconsin Nutrition Education Project and the Baraboo Project; and relations with professional organizations such as the Association of State and Territorial Nutrition Directors and the Wisconsin Dietetic Association. Many of the narrative reports are arranged by county. Also included are photographs primarily documenting school lunch programs during the 1940s and scattered blueprints of medical care facilities submitted for division approval. The discs are a recording of talks by Conrad Elvehjem and others on food fads and quackery. One tape recording is a presentation about the Western Wisconsin Nutrition Education Project at Barron County Normal School; the two remaining recordings are presentations by elementary school students during the early 1950s about the nutrition and health classes at their schools.
